Ofe Oligbu

How To Prepare Bitter leaf soup. 

This soup is specially associated with Anambra state in the Eastern part of Nigeria.

If you eventually add your bitter leaf soup a whole lump of dried fish,  you will be good to go.
The amazing thing about this soup aside the fact that it's rich in nutrients is that it's equally medicinal.

INGREDIENTS REQUIRED :
Bitter leaf
Cocoyam/flour/oat/Ache/Ofo ( for thickner )
Meat of your choice
Stock fish
Dried fish ( optional )
Red oil
Ogiri (traditional seasoning)
Maggi cubes
Prawn

PREPARATORY PROCESS :
STEP 1 :
Wash the bitter leaf thoroughly to remove the excess bitterness and set it aside
Step 2 :
Cook your meat and stock fish with onions, pepper and maggi cubes till its soft
Step 3 :
After the meat is thoroughly cooked,  add water to the meat pot and add your already washed bitter leaf and alow to boil
Step 4
When it starts boiling, add your already pounded Peper and prawn and add to it
Step 5 :
Add your ogiri (traditional seasoning ) optional though and stir thoroughly afterwards
Step 6 :
Add 2 cooking spoon full of red oil and cover for 5 minutes.  Stir afterwards and add maggi cubes stir and put it down. 

Serve with any swallow of your choice.
