Beans Porridge

How To Prepare Beans Porridge


Aside the very uual beans that you already know,  when I travelled to Kaduna State in Nigeria, I stumbled across a very peculiar special kind of beans that comes in different colours, ranging from black, white, black mixed with white and brown, the beans comes in tiny grain but after cooking it the grains turn out much bigger.

This is what the grains look like.  Perhaps you've seen this specie of beans before or its known in your state of residence,  do not relent in sharing with us.  Because it's a new discovery, I'm going to prepare it very rich.

INGREDIENTS REQUIRED :
Beans
Assorted meat
Onga maggi cube
Red oil
Fresh pepper
Onions
Pumpkin leaf
Dried fish


PREPARATORY PROCESS :
Step 1 :
Wash the beans with cold water after sieving out sand grains from the beans

Step 2 :
Put hot water on fire and pour the already washed beans into the boiling water and alow it to cook for 20minutes, then sieve out the water and put a fresh one.

Bear in mind that part of what makes this beans unique is the fact that if you fail to sieve out the first water after 20minutes, the beans will come out very bitter after its cooked and I'm sure that's one risk you wouldn't want to take. 

Step 3 :
Put the beans back on fire and reduce your gas heat to the lowest level adding enough water to cover the beans surface and cook for another 2-3 hours. 


For those of you who don't mind,  you can add potash (Akanwa) to it to facilitate the cooking but I personally prefer it the traditional methodology of cooking and waiting #smiles.

Step 4 :
After the beans is cooked,  put it down from the fire wash and put your assorted meat into a fresh pot and season it thoroughly using Onga maggi cube, onions and Cameron dry pepper.

Step 5 :
Alow the meat to cook till its soft,  pour the beans inside the already cooked meat, add a pinch of salt, onions, fresh blended pepper, crayfish, enough quantity of red oil, Onga maggi cube and cover it allowing it to boil thoroughly for another 10 minutes and stir afterwards. 

Step 6 :
Slice and wash your pumpkin leaf and add it now, stir and taste to know if you need more seasoning and add your smoked fish now, stir and serve hot.
