Ofe Akwu

How To Prepare Ofe Akwu. 


Growing up I have always wondered how my mum makes a great dish out of palm fruits,  I never alow that thought go silent in my head until I sat right next to her while she prepared it and afterwards, the whole magic I have been thinking she does,  downed on me that it's nothing so magical after all. 

Soni dare to tell you that ofe akwu is one of the very dishes I learnt at a very tender age and ever since then,  I have gotten only better by each passing day. 

Follow me carefully as I take you through yet another ride on my Ofe Akwu recipes and it's preparatory process. 

The very simply and cost effective ingredients that you will be needing for this dish includes :

INGREDIENTS REQUIRED :

1. Palm fruit
2. Assorted meat or any meat of your choice
3. Fresh pepper and crayfish
4. Stock fish
5 . Dried fish
6. Scent leave
7. Salt and maggi cubes to taste. 
8. Onions

PREPARATORY PROCESS :
Step 1 :
Wash the palm fruit to remove every trace of sand and cook it with enough water for about 40 minutes and sieve out the water. 

Step 2 :
Pound the palm fruit using mortar and pestle till every trace of the juice extract is extracted from the palm fruit. 


3. Step 3 :
Using warm water,  extract the palm oil from the fruit and sieve out every trace of sand using a tiny opening.
 

Step 4 :
Cook the extract till red oil floats on the surface and immediately slice in onions and alow to cook for another 5 minutes. 

Step 5 :
Add the blended fresh pepper and crayfish, stir and alow to cook for another 5 minutes

Step 6 :
Add the already cooked meat,  dried fish etc and the meat stock and alow to boil thoroughly.

Step 7 :
Slice the scent leave, wash it and add it to the soup, add salt and maggi cubes, stir.

Step 8 :
Allow to cook for another 2 minutes and your delicious ofe akwu is ready to be eaten with swallow or pasta.
