How To Prepare Ofe Owerri

This very soup is one that is rich in culture and synonymous to the Imo State in Eastern part of Nigeria. 

It very easy to prepare.  Simply follow me closely as I take you through its preparatory processes bearing in mind that there are diverse ways of preparing this soup but this is the most acceptable method preferred by me.



You will need the belo
w listed ingredients. 

INGREDIENTS REQUIRED :

1. Okazi leaf 
2.  ugu leaf (pumpkin ) 
3. Cocoyam yam 
4. Red oil 
5. Stock fish 
6. Periwinkles 
7. Meat of your choice 
8. Dried fish 
9. Kpomo ( cow skin ) 
10. Fresh pepper and crayfish. 

PREPARATORY PROCESS :
PREPARATORY PROCESS : 
Step 1 : 
Cook all your meat and stock fish till its soft. 

Step 2 : Boil and pound the Cocoyam yam after peeling off the back step 

3 : Add water to your already cooked meat, add red oil,  blended red pepper and crayfish and allow to boil for 3 minutes.  

Step 4 add the pounded cocoyam bit by bit  and cover and allow it to desolve into the meat stock till the water thickens.  

Step 5 : Wash and add your okazi leaf, cover and allow to cook for 3 minutes and immediately add the ugu leaf,  stir,  add seasoning cube,  taste and adjust salt.

Step 6 :
 Add traditional seasoning like okpei or ogiri (optional ) stir and set down. It's that simple.


Note: for native soup, it's same method only exception is that you add uziza leaf other than okazi and ugu. 


Your soup is ready to be eaten with any swallow of your choice.
