Coconut Chicken Sauce

How To Prepare Coconut Chicken Sauce.

This sauce just happened to be one of my favourite meals.  It does not only tastes sumptuous but to think of the fact that it practically goes with any grain or pasta of your choice,  makes it even more rewarding.

The simple ingredients that you will be needing for this are not
difficult to get across and the cost are equally friendly.

INGREDIENTS REQUIRED :
1.  Chicken breast
2. Coconut milk
3. Fresh pepper
4.  Onions
5. Seasoning
6. Curry / Tyme
7. Corn flour
8. Olive oil
9. Green bell pepper
10. Hot chilli sauce.

PREPARATORY PROCESS :
Step 1 :
Slice the chicken breast into small sizes/shape of your choice, marinade and set in fridge for 1 hour

Step 2 :
Using small quantity of olive oil, fry the chicken breast bit by bit on a low heat till properly brown and cooked. Set same aside in a kitchen napkin. Immediately add the sliced white and red onions into the same oil

Step 3 :
Add the already grated and extracted coconut milk into the pan stir frying the onions.

Step 4 :
Add curry,  tyme,  nutmeg, garlic, seasoning cube,  chilli sauce,  blended pepper and allow to simmer for about 5 minutes.

Step 5 :
Using cold water,  desolve 2 tablespoon full of corn flour and add to the boiling coconut milk and alow to thicken.  Tastes and adjust seasoning.

Step 6 :
Add the already fried chicken,  stir and immediately add all the sliced vegetables,  stir and serve almost immediately so the vegetables doesn't overcook.

You see its that simple to cook.  Serve with any grain or pasta or tuber of your choice.

Note :
What you have above are coconut milk and chicken sauce and only chicken sauce.
The difference is simply that you add water in place of your coconut milk.
